To make this Spanish rice I started setting my Instant Pot to the Saute setting.

Once the display said HOT, I added some olive oil to the pot.

I also added some garlic puree to the pot.

Then I added some diced onions to the pot.

I stirred all of the ingredients together well.

Then I added some long grain white rice to the pot.

I stirred the rice around for a couple minutes until it started to brown slightly.

Then I turned off the Instant Pot and added some chicken broth to the pot.

I scraped the bottom of the pot well to make sure nothing was sticking.

Then I added some salt, chili powder, paprika and cumin to the pot.

I stirred well.

Then I added some Rotel diced tomatoes and green chilies and tomato sauce to the pot.

I also added some frozen corn to the pot.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.

Once the Instant Pot was done pressure cooking, I left it to natural release for 15 minutes.

After 15 minutes I turned the steam release handle to the venting position to release the remaining steam.

I removed the lid from the pot.

I stirred the contents.

Then I added 2 tablespoons of butter to the pot.

I used a fork to fluff the rice.

I garnished the rice with fresh jalapeno slices before serving.

Ingredients You’ll Need to Make This Instant Pot Spanish Rice:

  • 1 tbsp olive oil

How to Make Instant Pot Spanish Rice:

  1. Set Instant Pot to Saute setting.

  5. Add the rice to the pot.

  8. Stir and scrape the bottom of the pot well to make sure nothing is sticking to the bottom.
  9. Add the salt, chili powder, paprika and cumin to the pot and stir again.
  10. Add the Rotel and tomato sauce to the pot. Do not stir.
  11. Add the frozen corn to the pot. Do not stir.
  12. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.
  13. Once the Instant Pot is done pressure cooking leave it to Natural Release for 15 minutes.
  14. After 15 minutes turn the steam release handle to the venting position to release the remaining steam.

  16. Add the butter to the pot and fluff the rice with a fork.
