Instant Pot Spanish Rice is a simple side dish recipe perfect for serving with a variety of main dishes.
This flavourful rice has a bit of a kick but is not overly spicy.
This Instant Pot rice recipe takes about forty minutes minutes from start to finish and serves six to eight people as a side dish.

To make this Spanish rice I started setting my Instant Pot to the Saute setting.
Once the display said HOT, I added some olive oil to the pot.
I also added some garlic puree to the pot.
Then I added some diced onions to the pot.
I stirred all of the ingredients together well.
Then I added some long grain white rice to the pot.
I stirred the rice around for a couple minutes until it started to brown slightly.
Then I turned off the Instant Pot and added some chicken broth to the pot.
I scraped the bottom of the pot well to make sure nothing was sticking.
Then I added some salt, chili powder, paprika and cumin to the pot.
I stirred well.
Then I added some Rotel diced tomatoes and green chilies and tomato sauce to the pot.
I also added some frozen corn to the pot.
Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.
Once the Instant Pot was done pressure cooking, I left it to natural release for 15 minutes.
After 15 minutes I turned the steam release handle to the venting position to release the remaining steam.
I removed the lid from the pot.
I stirred the contents.
Then I added 2 tablespoons of butter to the pot.
I used a fork to fluff the rice.
I garnished the rice with fresh jalapeno slices before serving.
This tasty rice is the perfect side dish for serving with a variety of Mexican dishes including tacos and enchiladas.
I used mild Rotel for this recipe but you could use regular if you prefer a bit more heat.

- Add the Rotel and tomato sauce to the pot. Do not stir.
