Ingredients You’ll Need to Make These Maraschino Cherry Brownies:

  • 1 box (18.4 ounces) brownie mix (I used Betty Crocker Milk Chocolate Brownie Mix)
  • ½ cup chocolate chips
  • ½ cup quartered maraschino cherries drained and dry out with a paper towel as much as possible.
  • ½ cup oil (I used olive oil)
  • 2 eggs
  • 3 tablespoons hot water
  • 2 teaspoons instant coffee (I used 1 packet of 0.1 ounces)
  • 1 teaspoon vanilla extract

Topping

  • ½ cup mini chocolate chips
  • 3 tablespoons quartered maraschino cherries, drained and dry

How to Make Maraschino Cherry Brownies:

  1. Preheat the oven to 350 degrees F.
  2. Butter (you can also use oil or baking spray) a 9×9 baking dish.
  3. Line with parchment paper and butter the parchment paper as well. Set aside.
  4. In a large mixing bowl, pour the brownie mix and add the chocolate chips and the quartered cherries. Mix to coat the chocolate chips and cherries with the brownie mix.
  5. Add the oil and eggs. Whisk all ingredients together.
  6. In a small separate bowl, mix the water and the instant coffee.
  7. Mix well and add to the brownie mixture with the vanilla extract.
  8. Whisk until all ingredients are incorporated. Don’t overmix.
  9. Pour the mixture into the prepared baking dish.

You won’t taste the coffee at all. It is using brownie mix at its best, tastes homemade, and is made with the ease of a brownie mix.

  • Store the leftovers in an airtight container on the counter for 2 to 3 days and in the fridge for up to a week.
  • Use the leftovers: I love using leftover brownies and crumble and use them as a topping on a Sundae or mix with a homemade chocolate mousse.
  • When baking brownies, let them cool completely before cutting into them. A brownie is baked when inserting a toothpick in the middle will come out clean. If you prefer a more fudgy (my favorite) brownie, the toothpick will have wet crumbs on it. If it looks like the brownie has batter on the toothpick, keep baking for a few more minutes.
