To make these oat bars, I started by lining an 8 x 8 inch baking pan with parchment paper.
I melted some butter in a saucepan.
Once the butter was melted, I added some brown sugar, vanilla extract and salt to the pot.
I stirred until the brown sugar was dissolved.
I added some quick oats to the pot.
I stirred until all of the ingredients were well combined.
Then I scooped half of the oat mixture into the prepared baking dish.
I pressed the mixture down to form a crust.
I poured some semi sweet chocolate chips and creamy peanut butter into a different saucepan.
I stirred over medium-low heat until the chocolate chips were fully melted.
I poured the melted chocolate and peanut butter mixture over the oat base in the baking pan.
I spread the chocolate mixture out evenly.
I sprinkled the remaining oat mixture on top.
I covered the baking dish with plastic wrap and placed it in the refrigerator for two hours to set.
After two hours I removed the pan from the fridge and left the bars to sit at room temperature for ten minutes.
Then the chocolate oat bars were ready to slice.
I sliced my oat bars into sixteen squares.
These no bake oat bars are the perfect treat for chocolate and peanut butter lovers.

Ingredients You’ll Need to Make These No Bake Chocolate Oat Bars:
- 1 cup Unsalted Butter (227 g)
- ½ cup Brown Sugar (110 g)
- 1 teaspoon Vanilla Extract (5 ml)
- ½ teaspoon Salt (1 g)
- 3 cups Quick-Cooking Oats (If you don’t have quick-cooking oats you can pulse your oats in a food processor 3 times to break them up.) (240 g)
- 1 cup Semi-Sweet Chocolate Chips (170 g)
- ½ cup Creamy Peanut Butter (125 g)
How to Make No Bake Chocolate Oat Bars:
- Grease and place a piece of parchment paper into an 8-inch square pan.
- In a saucepan, melt the butter.
- Once the butter has melted, add the brown sugar, vanilla, and salt. Stir until the brown sugar has dissolved (about 3 minutes).
- Add in the oats and cook over low heat until the mixture is well combined.
- Add half of the oat mixture to the prepared 8-inch pan. Pressing the mixture down to form a crust. **I like to use the bottom of a measuring cup to press down the crust. Set aside.
- In a different saucepan add the chocolate chips and peanut butter. Place over medium-low heat.
- Stir the mixture with a spatula until the chocolate chips have melted and the mixture is well combined.
- Pour the mixture over the top of the prepared baking pan with the crust in. Smooth out the chocolate mixture until it’s evenly distributed in the pan with a spatula.
- Gently add the remaining oat crumbs over the top of the chocolate. Spread them out evenly and gently press them into place.
- Cover the pan with a piece of plastic wrap and place it in the fridge for at least 2 hours (overnight is fine too). This will allow the bars to harden.
- Remove from the fridge and allow to warm up for about 10 minutes before cutting into them (it’s much easier to cut through them when they warm a bit).
- Cut them into bars and serve.
- Enjoy!

Notes
- I used unsalted butter in this recipe but margarine or salted butter would work just as well. You’ll want to reduce the salt.
- I used quick-cooking oats in this recipe but rolled oats would work too. To help them cook quicker, place the oats in a food processor and pulse them about 3 times. This will break the oats down.
- Creamy peanut butter was used in this recipe and I did not test it using crunchy. It would probably work just fine. The only issue I see is cutting into the bars might be a bit hard.
