To make this casserole, I started by dumping some lean ground beef into a large non stick skillet over medium-high heat.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked, I drained the grease from the pan.
Then I added some Rotel and canned corn to the skillet.
I stirred well.
Then I added some salsa and a packet of taco seasoning to the skillet.
I stirred all of the ingredients together well.
Then I added a can of cheddar soup to the skillet.
I stirred well.
Then I added a brick of softened cream cheese to the skillet.
I stirred until the cream cheese was melted.
I sprayed a 9 x 13 inch baking dish well with cooking spray.
I poured the ground beef mixture into the baking dish and spread it out evenly.
I crumbled some Doritos and sprinkled them over the top.
Then I sprinkled some shredded Mexican cheese blend over the Doritos.
I placed the dish in the oven and baked the casserole until is was bubbling and the cheese on top was fully melted.
I remove the casserole from the oven and allowed it to sit for a couple minutes.
I sprinkled some shredded lettuce and halved grape tomatoes on top.
Then the taco casserole was ready to scoop and serve.
You can serve your beef taco casserole with a variety of different toppings.
I served my taco casserole with ranch dressing and sour cream on the side for topping.
