To make these Tex Mex meatballs, I started by dumping some lean ground beef and an egg into a large mixing bowl.

I poured some Fritos corn chips into a ziploc bag.

I used a rolling pin to crush the chips.

Then I poured the crumbs into the mixing bowl with the ground beef.

I added some taco seasoning, onion powder, garlic powder, salt and pepper to the bowl.

I also added some shredded Mexican cheese blend to the bowl.

I used my hands to combine all of the ingredients together well.

Then I rolled the meat mixture into sixteen balls.

I heated some olive oil in an oven safe skillet over medium-high heat.

I placed the meatballs in the skillet and seared the bottoms for about 2 minutes.

I flipped the meatballs and cooked the other side for about 2 minutes.

I reduced the heat to medium-low and added some tomato sauce and corn and black bean salsa to the skillet.

I stirred the meatballs gently to combine the salsa and tomato sauce.

I placed a lid on the skillet and cooked the meatballs until they reached an internal temperature of 165F.

Then I removed the pan from the heat.

 

I sprinkled some shredded cheese on top of the meatballs.

Then I placed the skillet in the oven under the broiler for a few minutes to melt the cheese and brown it up slightly.

I removed the skillet from the oven and sprinkled some chopped parsley on top before serving.

  • 1.5 lbs lean ground beef
  • 1 egg, large
  • 4 oz Fritos corn chips, crushed
  • 1 oz taco seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 ½ cups shredded Mexican cheese blend
  • 1 tablespoon olive oil

  • 1 ½ cups tomato sauce
