To make this ground beef casserole, I started by greasing a 9 x 13 inch baking dish and setting it aside.

Then I heated some oil in a large skillet.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully browned, I added some diced onions, green bell pepper and minced garlic to the skillet.

I stirred well and cooked until the vegetables were tender.

Then I added some corn, black beans, enchilada sauce, chili powder, coriander, cumin, salt, and pepper to the pan.

I stirred all of the ingredients together well.

I spread approximately half of the ground beef mixture in the bottom of the prepared baking dish.

I sprinkled some chopped corn tortilla pieces on top.

Then I sprinkled some shredded cheese over the tortilla pieces.

I spooned the remainder of the ground beef mixture on top.

I sprinkled some more shredded cheddar cheese on top.

I covered the dish with foil.

I placed the dish in the oven and baked the casserole for thirty minutes.

  5. Add the onion, green bell pepper, and garlic to the pan and cook until the vegetables are tender. Turn heat to medium-low.
