To make this dish, I started by quartering some cherry tomatoes.

I drizzled some olive oil in the bottom of a large baking dish.

I placed four boneless, skinless chicken breasts in a single layer in the dish.

I sprinkled the prepared seasoning mix over the chicken breasts.

I placed the dish in the oven and baked until the chicken breasts reached an internal temperature of 165F.

I allowed the chicken breasts to rest for a few minutes in the pan.

  • 12 ounces cherry tomatoes

  • 1.5 pounds boneless skinless chicken breasts (4 breasts, about 6 ounces each)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • 3-4 grinds freshly ground black pepper
  • 8 ounces fresh mozzarella cheese (I used Frigo brand)
  • 1.5 tablespoons balsamic glaze

How to Make Bruschetta Chicken Bake:

  1. Preheat the oven to 400F.
  2. Prepare the bruschetta. Halve or quarter the cherry tomatoes, depending on their size. Finely chop the basil. Mince the garlic.
  3. Add the tomatoes, garlic, basil, salt, pepper and 1 tablespoon olive oil to a small mixing bowl.
  4. Stir well to combine all the ingredients. Set aside, and allow the flavors to meld while you prepare the chicken.
