To make this chicken and broccoli casserole, I started by cutting some boneless, skinless chicken breasts into one inch cubes.

Then I dumped some cream of broccoli soup, cream cheese, sour cream, diced onion, Colby jack cheese, garlic, pepper, salt, and Velveeta cheese into a large mixing bowl.

I stirred well.

Then I added some thawed broccoli florets and the chicken breast chunks to the bowl.

I stirred well again.

I sprayed a 9 x 13 inch baking dish well with cooking spray.

Then I dumped the mixture into the dish and spread it out evenly.

I covered the dish with foil and place it in the oven.

After 40 minutes I removed the foil and continued baking for 20 minutes.

While the casserole was in the oven, I cooked some white rice according to the package directions.

When the casserole was done baking, I removed it from the oven.

I dump the prepared rice on top of the casserole.

I stirred the rice into the casserole.

  • 4 ounces cream cheese, softened and cubed
  • 1/2 cup sour cream
  • 1/2 of a small sweet onion, diced
  • 1 cup Colby jack cheese, shredded
  • 1 tablespoon garlic, minced
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 cup Velveeta cheese cubes
  • 3 large chicken breasts, raw and cut into 1-inch cubes
  • 3 cups frozen broccoli florets, thawed
  • 2 cups white rice

How to Make Chicken Broccoli Rice Casserole:

  1. Preheat your oven to 375 degrees and grease a 9×13 baking dish with non-stick cooking spray.
  2. In a large bowl, combine cream of broccoli soup, cream cheese, sour cream, onion, Colby jack cheese, garlic, pepper, salt, and Velveeta cheese.
  3. Stir until smooth, the cream cheese and Velveeta cheese will remain solid, and this is ok.
  4. Stir in broccoli and chicken until well coated in the cheese mixture.
  5. Spread the mixture out evenly into a 9×13 baking dish and bake for 1 hour, or until chicken is cooked throughout and broccoli has softened. Cover your casserole with aluminum foil for the first 40 minutes of baking and uncover it for the last 20 minutes of baking.
  6. While your casserole is baking, boil your rice according to package directions.
  7. Once your casserole is out of the oven, mix the rice into the casserole making sure it is placed evenly throughout the casserole.
