To make this dish I started by dumping a can of cream of chicken soup into a large mixing bowl.
Then I added some cream of mushroom soup to the bowl.
I also added some poultry seasoning, salt and pepper to the bowl.
I stirred all of the ingredients together well.
Then I added some shredded rotisserie chicken to the bowl.
I stirred until all of the chicken was coated in the soup mixture.
Then I added some frozen mixed veggies and frozen corn to the bowl.
I stirred until all of the ingredients were fully combined.
I sprayed a 9 x 13 inch baking dish well with cooking spray.
Then I dumped the chicken mixture into a baking dish and spread it out evenly.
Then I prepared some instant mashed potatoes according to the directions on the package.
Once the potatoes were ready, I spooned them over the chicken mixture in the baking dish.
Then I spread the mashed potatoes out evenly.
I placed the dish in the oven and baked the shepherd’s pie until it was bubbling around the edges and the mashed potatoes were starting to brown.
I removed the dish from the oven and allowed it to sit for a few minutes.
Then the chicken shepherd’s pie was ready to scoop and serve.
This hearty chicken dish is a cross between a chicken pot pie and a shepherd’s pie.
