I set the cooked rice aside.

I dropped a pound of ground chicken into a large skillet over medium-high heat.

I added some minced garlic to the skillet.

I also added some frozen corn and frozen chopped spinach to the skillet.

I stirred well and continued cooking until the corn and spinach were hot.

I reduced the heat to low and added some Cajun seasoning to the skillet.

I stirred until all of the ingredients were coated in the seasoning.

Then I added the cooked rice to the skillet.

I added some ranch dressing to the skillet.

I stirred until the dressing was fully combined with the chicken and rice mixture.

I added some shredded cheddar cheese to the skillet and stirred until it was melted.

I sprinkled some more shredded cheddar cheese on top and this time did not stir.

I placed a lid on the skillet to help melt the cheese.

Once the cheese was melted I removed the skillet from the heat and topped the dish with fresh lime slices.
