To make this dish, I started by cooking some macaroni noodles according to the directions on the package.
Then I drained the noodles and set them aside.
While the noodles were cooking I chopped up some bacon.
I added the chopped bacon to a non stick skillet over medium-high heat.
I spread the pieces of bacon out so that they would cook evenly.
I left the bacon to cook, stirring and flipping occasionally, until it was nicely browned and crispy.
Then I used a slotted spoon to transfer the bacon to a paper towel lined plate.
I added some diced sweet potato, diced onions and diced red bell peppers to the skillet with the bacon grease.
I stirred well and cooked the vegetables for five minutes.
Then I added some canned corn to the skillet.
I stirred well again.
I added some Cajun seasoning and salt to the skillet.
I stirred until all of the veggies were coated in Cajun seasoning.
Then I added some all purpose flour to the skillet.
I stirred well and continued cooking for three minutes.
I added some chicken broth to the skillet.
I stirred well until the liquid thickened.
Then I added some heavy cream to the skillet.
I stirred well and brought the liquid to a boil.
I reduced the heat to medium-low and left the liquid to continue simmering and thickening for four minutes.
Then I added the cooked macaroni to the skillet.
I stirred until all of the noodles were coated in sauce.
Then I add the cooked bacon and some chopped chives to the skillet.
I stirred well and removed the skillet from the heat.
I added some shredded cheddar and Monterey Jack cheese to the skillet.
I stirred just until the cheese was melted.
Then the Cajun macaroni and cheese was ready to serve.
