To make this macaroni and cheese, I started by cooking some macaroni noodles according to the directions on the package.
Then I drained the noodles and set them aside.
While the noodles were cooking, I dumped a pound of lean ground beef into a large non stick skillet over medium-high heat.
I crumbled the ground beef well as it cooked.
I added some diced onions to the skillet with the ground beef.
I stirred the onions and ground beef together well.
Once the ground beef was fully cooked, I added some all purpose flour and a packet of taco seasoning to the skillet.
I stirred until all of the ground beef was coated in the flour and seasoning mixture.
I continued cooking the mixture for a few minutes.
Then I added a can of Rotel to the skillet.
I also added some salt and pepper to the pan.
I stirred all of the ingredients together well.
Then I added some heavy cream to the pan.
I stirred well and then brought it to a boil.
Once the liquid was boiling, I reduced the heat to medium and left it to simmer and thicken for about five minutes.
Then I added the cooked macaroni noodles to the pot.
I stirred until all of the noodles were coated in sauce.
I left the macaroni to continue cooking for four minutes.
Then I removed the pan from the heat.
I added some shredded cheese to the skillet.
I stirred until the cheese was melted.
Then I added some chopped green onions to the skillet.
I stirred well again.
Then the taco macaroni was ready to serve.
I scooped the mac and cheese on to plates.
Then I topped the macaroni with shredded cheese, crispy tortilla strips, sour cream and chopped green onions.

- Crumble the ground beef well as it cooks.
- Add the diced onions to the skillet with the ground beef and stir well.
- When the ground beef is fully cooked, add the flour and taco seasoning to the skillet.
- Stir until all of the ground beef is coated in the flour and taco seasoning.
- Continue cooking the mixture for 3 minutes.
- Add the Rotel, salt and pepper to the skillet and stir well.
- Add the heavy cream to the skillet.
- Stir well and bring to a boil.
- Once it’s boiling, reduce the heat to medium and leave the mixture to simmer and thicken for 5 minutes.
- After 5 minutes, add the cooked macaroni noodles to the skillet.
- Stir until all of the macaroni is coated in sauce.
- Leave the mixture to continue cooking for 4 minutes.
- After 4 minutes, remove the skillet from the heat.
- Add the shredded cheese to the skillet.
- Stir until the cheese is melted.
- Add the chopped onions to the skillet and stir again.
- Serve and garnish with shredded cheese, crispy tortilla strips, sour cream and chopped green onions if desired.
