To make these cream cheese enchiladas, I started by dumping some softened cream cheese and sour cream into a large mixing bowl.
I added some salt, pepper, garlic powder and onion powder to the bowl.
I used an electric mixer to combine all of the ingredients until no large chunks remained.
Then I added some shredded rotisserie chicken to the bowl.
I stirred until all of the chicken was coated in the cream cheese mixture.
Then I added a can of Rotel diced tomatoes and green chilies to the bowl.
I stirred well again.
I also added some shredded Mexican cheese blend and chopped green onions to the bowl.
I stirred until the shredded cheese and green onions were fully combined with the chicken mixture.
Then I laid some large flour tortillas on the counter.
I scooped the cream cheese chicken mixture onto the tortillas.
Then I rolled the tortillas up and placed them seam side down in a greased 9 x 13 inch baking dish.
I poured some green enchilada sauce over the rolled tortillas.
Then I sprinkled some more shredded cheese on top.
I placed the dish in the oven and baked the enchiladas until the tortillas were starting to brown around the edges.
Then I removed the dish from the oven.
I scooped and served the chicken enchiladas immediately.

- Add the chopped green onions and 2 cups of the shredded cheese to the bowl and stir well again.
- Lay the tortillas on the counter and scoop the chicken mixture onto the tortillas.
- Roll up the tortillas and place them seam side down in a greased 9 x 13 inch baking dish.
- Pour the enchilada sauce over the tortillas.
- Sprinkle the remaining 1/2 cup of shredded cheese on top of the enchilada sauce.
- Place the dish in oven and bake until the tortillas are browning around the edges. 34-38 minutes.
- Remove the dish from the oven and serve.
