To make this fettuccine alfredo, I started by cooking a pound of fettuccine according to the directions on the package.
Then I drained the pasta and set it aside.
I chopped some boneless, skinless chicken breasts into approximately one inch chunks.
Then I placed the chicken breast chunks into a mixing bowl.
I added some Cajun seasoning to the bowl with the chicken breast chunks.
I stirred until all of the chicken breast chunks were coated in the seasoning.
Then I dumped the chicken breast chunks into a large saute pan over medium-high heat.
I cooked the chicken breast chunks for eight minutes, stirring occasionally to make sure they cooked evenly on all sides.
Then I added some butter and garlic puree to the pan.
I stirred until the butter was melted.
Then I added some heavy cream, salt and pepper to the pan.
I stirred well and brought the liquid to a boil.
Once the liquid was bowling I reduced the heat to medium-low and placed a lid on the pan.
I left the sauce to simmer for eight minutes, stirring occasionally.
After eight minutes I removed the lid and added the cooked fettuccine to the pan.
I stirred until all of the fettuccine was coated in sauce.
I left the dish to continue cooking for four minutes.
Then I added some shredded parmesan cheese to the pan.
I stirred until the cheese was melted.
Then I added some chopped chives to the pan.
I stirred well again.
Then the creamy fettuccine was ready to serve.
This Cajun alfredo has a bit of a kick but is not overly spicy.
It’s a fun twist on the usual chicken fettuccine alfredo.
