To make this cheesy chicken and rice, I started by cutting some boneless skinless chicken breasts into one inch cubes.
Then I set my Instant Pot to Saute Less for 7 minutes.
I dropped a dab of margarine into the bottom of the pot.
Then I dumped the chicken breast chunks into the pot.
I left the chicken to cook, stirring occasionally, until the Instant Pot turned off.
When the Instant Pot turned off the chicken was still slightly pink.
I poured some condensed chicken broth and water into the pot.
Then I added some long grain white rice to the pot.
I gently pushed the rice around until it was all submerged in the liquid but did not stir.
Then I added some salt, pepper, garlic powder and onion powder to the pot.
I also added some condensed cheddar cheese soup the the pot.
Then I dumped some Rotel diced tomatoes and green chilies into the pot.
I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 6 minutes.
Once the Instant Pot was done cooking, I immediately turned the steam release handle to the venting position and performed a quick release.
Then I removed the lid from the pot.
I stirred the contents well.
Then I added some shredded mozzarella and cheddar cheese to the pot.
I stirred until the cheese was melted.
Then the cheesy chicken and rice was ready to serve.
This flavourful chicken dish is sure to please the whole family.
The condensed cheddar cheese soup makes this recipe extra cheesy.
