To make this buffalo chicken dish, I started by cutting some boneless, skinless chicken breasts into bite sized chunks.
Then I set my Instant Pot to Saute Less for 7 minutes.
I added a dab of margarine to the pot.
Then I added the chicken breast chunks to the pot.
I left the chicken pieces to cook, stirring occasionally, until the Instant Pot turned off.
The chicken breast chunks were still slightly pink.
Then I added some condensed chicken broth and water to the pot.
I added some long grain white rice to the pot.
I gently pushed the rice around until it was all submerged in the liquid, but did not stir.
Then I added some salt, pepper, garlic powder and onion powder to the pot.
I also added some buffalo sauce to the pot.
Then I added some diced celery and onions to the pot.
I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 6 minutes.
Once the Instant Pot was finished cooking, I immediately turned the steam release handle to the venting position and performed a quick release.
I removed the lid from the Instant Pot.
Then I stirred the contents well.
I added some ranch dressing and shredded mozzarella and cheddar cheese to the pot.
I stirred just until the cheese was melted.
Then the cheesy buffalo chicken and rice was ready to serve.
I used mild buffalo sauce for just a bit of a kick but you could use hot if you prefer.

I like to give credit where credit is due so try to make sure I comment on recipes I download.
I made this a couple of days ago with one change... my wife doesn't like spicey so I used BBQ sauce instead of buffalo sauce. That was the only change. She loved it! I know I would like the buffalo sauce but very good with the BBQ sauce.
It was excellent! An easy and excellent recipe.
