To make this dish, I started by cutting some boneless, skinless chicken breasts into 1.5 inch chunks.
Then I poured some coconut milk into a mixing bowl.
I added some cornstarch, soy sauce, brown sugar, lime juice and sweet Thai chili sauce to the bowl.
I whisked all of the ingredients together well and set the bowl aside.
I cooked some rice stick noodles according to the directions on the package and set them aside.
Then I heated a large saute pan over medium-high heat.
I added some olive oil, garlic puree and minced ginger to the pan.
Then I added the chicken breast chunks to the pan.
I stirred well to coat the chicken in the garlic and ginger.
Then I left the chicken to cook, stirring occasionally until it was golden brown on the outside.
I poured the prepared sauce mixture into the pan.
I stirred well and then brought the mixture to a boil.
Once the sauce was boiling, I reduced the heat to medium-low.
I left the sauce to simmer and thicken for 10 minutes, stirring occasionally.
After 10 minutes, I added some smooth peanut butter and chopped peanuts to the pan.
I stirred until the peanut butter was melted.
Then I added the cooked rice noodles to the pan.
I stirred until all of the noodles were coated in the sauce.
Then I added some chopped green onions to the pan.
I stirred well again.
Then the peanut butter chicken was ready to serve.
I garnished the dish with sliced limes just before serving.
