To make this chicken fried rice, I started by chopping some boneless skinless chicken breasts into bite-sized pieces.

I added some frozen peas and carrots to the skillet.

Then I returned the chicken pieces to the pan.

I added some cooked rice, soy sauce, hoisin sauce, sesame oil, salt, and pepper to the pan.

I stirred all of the ingredients together well and continued cooking for about four minutes.

I added some pineapple chunks to the pan.

I stirred and continued cooking just until the pineapple was heated through.

How to Make Pineapple Chicken Fried Rice:

  1. Heat the wok or frying pan over high heat and add 1 tablespoon of vegetable oil.
  2. Add the diced chicken and stir fry for 4-5 minutes until it turns golden brown. Remove from the pan and set to one side.
  3. Add another tablespoon of oil and stir fry the onion and garlic for 2 minutes.
  4. Add the frozen peas and carrots and stir fry for another 2 minutes.
  5. Add in the cooked chicken and fry for one minute to heat through.
  6. Add the cooked rice, soy sauce, hoisin sauce, sesame oil, salt, and pepper, and stir fry for 3-4 minutes.
  7. Finally, add the pineapple chunks and combine. Stirring continuously until the pineapple is heated through.
