To make this macaroni and cheese, I started by cooking some macaroni noodles according to the directions on the package.

Then I drained the noodles and set them aside.

While the noodles were cooking, I dumped a pound of lean ground beef into a large non stick skillet over medium-high heat.

I crumbled the ground beef well as it cooked.

I added some diced onions to the skillet with the ground beef.

I stirred the onions and ground beef together well.

Once the ground beef was fully cooked, I added some all purpose flour and a packet of taco seasoning to the skillet.

I stirred until all of the ground beef was coated in the flour and seasoning mixture.

I continued cooking the mixture for a few minutes.

Then I added a can of Rotel to the skillet.

I also added some salt and pepper to the pan.

I stirred all of the ingredients together well.

Then I added some heavy cream to the pan.

I stirred well and then brought it to a boil.

Once the liquid was boiling, I reduced the heat to medium and left it to simmer and thicken for about five minutes.

Then I added the cooked macaroni noodles to the pot.

I stirred until all of the noodles were coated in sauce.

I left the macaroni to continue cooking for four minutes.

Then I removed the pan from the heat.

I added some shredded cheese to the skillet.

I stirred until the cheese was melted.

Then I added some chopped green onions to the skillet.

I stirred well again.

How to Make Taco Mac and Cheese:

  1. Cook macaroni according to the directions on the package.
  2. Drain and set aside.
  3. While the macaroni is cooking, dump the ground beef into a large non stick skillet over medium-high heat.
  4. Crumble the ground beef well as it cooks.
  5. Add the diced onions to the skillet with the ground beef and stir well.
  6. When the ground beef is fully cooked, add the flour and taco seasoning to the skillet.
  7. Stir until all of the ground beef is coated in the flour and taco seasoning.
  8. Continue cooking the mixture for 3 minutes.
  9. Add the Rotel, salt and pepper to the skillet and stir well.
  10. Add the heavy cream to the skillet.
  11. Stir well and bring to a boil.
  12. Once it’s boiling, reduce the heat to medium and leave the mixture to simmer and thicken for 5 minutes.
  13. After 5 minutes, add the cooked macaroni noodles to the skillet.
  14. Stir until all of the macaroni is coated in sauce.
  15. Leave the mixture to continue cooking for 4 minutes.
  16. After 4 minutes, remove the skillet from the heat.
  17. Add the shredded cheese to the skillet.
  18. Stir until the cheese is melted.
  19. Add the chopped onions to the skillet and stir again.
  20. Serve and garnish with shredded cheese, crispy tortilla strips, sour cream and chopped green onions if desired.
