To make this chicken frito pie, I started by dumping some shredded rotisserie chicken into a large mixing bowl.
If you don’t want to use grocery store rotisserie chicken you can precook your own chicken.
I like to cook chicken breasts in my Instant Pot and then use them for multiple recipes.
Then I added some Buffalo sauce and ranch dressing to the bowl.
I stirred until all of the chicken was coated in sauce.
Then I added some diced celery, chopped green onions and shredded mozzarella and cheddar cheese to the bowl.
I stirred until all of the ingredients were fully combined.
Then I dumped the chicken mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
I sprinkled some Fritos corn chips on top of the chicken.
Then I sprinkled some shredded mozzarella and cheddar cheese over the corn chips.
I sprinkled some chopped green onions on top of the cheese.
Then I placed the dish in the oven and baked the frito pie until the cheese on top was completely melted and starting to brown.
I scooped and served the chicken frito pie immediately.
This hearty dish is sure to please the whole family.
I used mild Buffalo sauce in this recipe but you could use hot if you prefer more of a kick.
