Sloppy Joe Frito Pie is an easy ground beef dinner recipe perfect for weeknights. Ground beef and onions are tossed in homemade sloppy joe sauce and then topped with Frito's corn chips and cheddar cheese.

To make this frito pie, I started by browning two pounds of lean ground beef in a large saucepan.

While the ground beef was cooking I added some diced onions to the pan.

I dumped some ketchup, Worcestershire, brown sugar and onion powder into a medium mixing bowl.

I stirred all of the ingredients together well to make the sloppy joe sauce.

Once the ground beef was fully cooked, I drained the excess grease from the pan and then poured the sauce over the beef.

I stirred until all of the ground beef was fully coated in the sauce.

I poured the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

Then I spread some Frito’s corn chips on top of the meat mixture.

I sprinkled some shredded cheese on top of the corn chips and then placed the dish in the oven.

I baked the frito pie until the cheese on top was completely melted and just starting to brown.

Ingredients

  • 2 lbs lean ground beef
  • 2 cups yellow onion, diced
  • 2 cups ketchup
  • 2 tsp Worcestershire
  • 1/2 cup light brown sugar
  • 1 tbsp onion powder
  • 5 cups Frito's corn chips
  • 3 cups Mexican cheese blend, shredded

Instructions

  1. Preheat oven to 400F.
  2. In a large saucepan over medium-high heat cook the ground beef with a dab of margarine or butter.
  3. Add the diced onions to the pan with the beef while it's cooking.
  4. In a medium mixing bowl combine the ketchup, Worcestershire, brown sugar and onion powder. Stir well.
  5. Once the beef is fully cooked drain the excess grease from the pan.
  6. Pour the sauce into the pan with the beef.
  7. Stir until all of the ground beef is completely coated in sauce.
  8. Pour the ground beef mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  9. Spread the corn chips on top of the meat mixture.
  10. Sprinkle the shredded cheese on top of the corn chips.
  11. Place the dish in the oven and bake until the cheese is fully melted and just starting to brown. 10-12 minutes.
