Cheesy Beef Goulash with Corn is an easy weeknight dinner recipe that takes less than 30 minutes from start to finish. This one pot dinner is loaded with diced tomatoes, macaroni noodles, ground beef corn and mozzarella cheese.

To make this beef goulash, I started by browning some ground beef in a large pot.

As the beef was cooking I added some diced onions to the pot.

Once the beef was fully cooked, I added some canned diced tomatoes, corn, condensed beef broth, water and seasonings to the pot.

I stirred all of the ingredients together and then added some uncooked macaroni noodles to the pot.

I stirred until all of the macaroni noodles were submerged in liquid and then brought the dish to a boil.

Once it started to boil I immediately reduced the heat to medium-low and left the goulash to simmer for 7 minutes, stirring occasionally.

After 7 minutes I added a can of condensed tomato soup to the pot.

I stirred well and left the dish to continue cooking for another 3 minutes.

Then I added some shredded mozzarella cheese to the pot and stirred until the cheese was melted.

I served the goulash right away.

  • 2 lbs lean ground beef
  • 1 cup diced onion
  • 28 oz canned diced tomatoes
  • 8.75 oz canned corn
  • 10.5 oz condensed beef broth
  • 2 cups water
  • 2 teaspoon paprika
  • 2 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups uncooked macaroni noodles
  • 10.75 oz condensed tomato soup
  • 2 cups mozzarella cheese, shredded

Instructions:

  1. Place a dab of butter or margarine into a large pot over medium-high heat.
  2. Add the ground beef to the pot and break it apart.
  3. Add the diced onions to the beef while it's cooking.
  4. Once the ground beef is fully cooked, add the diced tomatoes, corn, beef broth, water, paprika, onion powder, garlic powder, salt and pepper to the pot. Stir well.
  5. Add the uncooked macaroni noodles to the pot and stir until all of the noodles are submerged in liquid. If you cannot get all of the noodles submerged add a bit more water.
