To make this water chestnut chicken casserole, I started by dumping a can of cream of chicken soup, cream of mushroom soup and cream of bacon soup into large mixing bowl.
I added some water and milk to the bowl.
I also added some poultry seasoning and garlic salt to the bowl.
I stirred all of the ingredients together well.
I added some shredded chicken to the bowl.
I also added some sliced water chestnuts, sliced almonds and pimentos to the bowl.
I stirred well.
I added some instant rice to the bowl.
I stirred well again.
I sprayed a 9 x 13 inch baking dish well with cooking spray.
I poured the mixture into the baking dish and spread it out evenly.
I placed some Ritz crackers into a large Ziploc bag.
I used a rolling pin to crush the Ritz crackers.
I poured the Ritz cracker crumbs into a mixing bowl.
I added some melted butter to the bowl.
I used a fork to stir the cracker crumbs and butter together well.
Then I sprinkled the Ritz crackers crumbs over the chicken mixture in the baking dish.
I sprinkled some sliced almonds on top of the Ritz crumbs.
I placed the baking dish in the oven and baked the casserole for forty minutes.
Then I removed the dish from the oven and left the casserole to rest for a few minutes.
Then the chicken and rice casserole with almonds was ready to serve.

- 10.5 oz cream of chicken soup
- 10.5 oz cream of mushroom soup
- 10.5 oz cream of bacon soup
- 1 cup water
- 1 cup milk

- 3 cups shredded rotisserie chicken
- 8 oz can sliced water chestnuts, drained

Topping
- 1 sleeve Ritz crackers
- 1/4 cup butter, melted
- 1/4 cup sliced almonds
Instructions
- Preheat oven to 400F.
- Dump the all of the soups, water, milk, poultry seasoning and garlic salt into a large mixing bowl.
- Stir well.
- Add the shredded chicken, water chestnuts, sliced almonds and pimentos to the bowl and stir.
- Add the instant rice to the bowl and stir until all of the ingredients are well combined.
- Spray a 9 x 13 inch baking dish well with cooking spray.
- Pour the chicken mixture into the dish and spread it out evenly.
- Place the Ritz crackers in a Ziploc bag and use a rolling pin to crush them.
- Pour the cracker crumbs into a mixing bowl.
- Add the melted butter to the bowl and stir well with a fork.
- Sprinkle the buttery Ritz cracker crumbs on top of the chicken mixture in the baking dish.
- Sprinkle the almonds on top.
- Place the dish in the oven and bake for 40 minutes.
- Remove the dish from the oven and allow the casserole to rest for a few minutes.
- Serve and enjoy!
