To make this water chestnut chicken casserole, I started by dumping a can of cream of chicken soup, cream of mushroom soup and cream of bacon soup into large mixing bowl.

I added some water and milk to the bowl.

I also added some poultry seasoning and garlic salt to the bowl.

I stirred all of the ingredients together well.

I also added some sliced water chestnuts, sliced almonds and pimentos to the bowl.

I stirred well.

I added some instant rice to the bowl.

I sprayed a 9 x 13 inch baking dish well with cooking spray.

I poured the mixture into the baking dish and spread it out evenly.

I placed some Ritz crackers into a large Ziploc bag.

I used a rolling pin to crush the Ritz crackers.

I poured the Ritz cracker crumbs into a mixing bowl.

I added some melted butter to the bowl.

I used a fork to stir the cracker crumbs and butter together well.

Then I sprinkled the Ritz crackers crumbs over the chicken mixture in the baking dish.

I sprinkled some sliced almonds on top of the Ritz crumbs.

I placed the baking dish in the oven and baked the casserole for forty minutes.

Then I removed the dish from the oven and left the casserole to rest for a few minutes.

Ingredients

  • 10.5 oz cream of chicken soup

Instructions

  1. Preheat oven to 400F.
  2. Dump the all of the soups, water, milk, poultry seasoning and garlic salt into a large mixing bowl.
  3. Stir well.
  4. Add the shredded chicken, water chestnuts, sliced almonds and pimentos to the bowl and stir.
  5. Add the instant rice to the bowl and stir until all of the ingredients are well combined.
  6. Spray a 9 x 13 inch baking dish well with cooking spray.
  7. Pour the chicken mixture into the dish and spread it out evenly.
  8. Place the Ritz crackers in a Ziploc bag and use a rolling pin to crush them.
  9. Pour the cracker crumbs into a mixing bowl.
  10. Add the melted butter to the bowl and stir well with a fork.
  11. Sprinkle the buttery Ritz cracker crumbs on top of the chicken mixture in the baking dish.
  12. Sprinkle the almonds on top.
  13. Place the dish in the oven and bake for 40 minutes.
  14. Remove the dish from the oven and allow the casserole to rest for a few minutes.
