To make these chicken pillows, I started by dumping some softened cream cheese and mayo into a large mixing bowl.
I stirred the mayo and cream cheese together well.
Then I added some Italian seasoning to the bowl.
I stirred well again.
I added some shredded rotisserie chicken to the bowl.
I stirred until all of the chicken was coated in the mayo and cream cheese mixture.
I added some chopped green onions and shredded mozzarella and cheddar cheese to the bowl.
I stirred well again.
Then I opened two packages of Pillsbury crescent rolls.
I pressed two triangles of dough together along the seem to form a rectangle.
I repeated this to form eight rectangles.
Then I scooped the chicken mixture into the center of the rectangles.
I folded all the ends of the dough over the chicken and pressed the ends together.
I placed the chicken pillows, seam side down, on a parchment lined baking sheet.
I brushed the dough with melted butter.
Then I placed some Ritz crackers into a large Ziploc bag.
I used a rolling pin to crush the Ritz crackers.
Then I poured the Ritz crumbs into a shallow container.
I dipped the chicken pockets in the crumbs, butter side down.
I pressed down gently to get the crumbs to stick.
Then I returned the chicken pillows to the baking sheet.
I placed the baking sheet in the oven and baked until the chicken pillows were golden brown.
I removed the baking sheet from the oven.
I served my chicken pillows with some canned gravy.

- Scoop the chicken mixture into the center of the rectangles of dough.
- Fold up all of the edges of the dough and press the dough together to seal the chicken mixture inside.
- Place the chicken pillows, seam side down, on a parchment lined baking sheet.
- Brush the melted butter on the tops of the chicken pillows.
- Pour the crushed Ritz crackers into a shallow container.
- Place the chicken pillows, butter side down, in the Ritz cracker crumbs and press down gently to make the crumbs stick.
- Return the chicken pillows to the parchment lined baking sheet.
- Place the baking sheet in the oven and bake until the chicken pillows are golden brown. 15 – 18 minutes.
- Remove the baking sheet from the oven and serve immediately with hot gravy if desired.
