I heated some olive oil in a large skillet over medium-high heat.

I added some peeled and deveined shrimp to the skillet.

I stirred and cooked the veggies until they had softened.

I pushed the veggies to the edges of the pan to form a hollow in the center of the skillet.

I poured some beaten eggs into the hollow.

I stirred the eggs until they were cooked.

Then I stirred the cooked egg and veggies together.

I returned the cooked shrimp to the skillet.

I also added some cooked rice and soy sauce to the skillet.

I stirred well and continued cooking for a few minutes to ensure all of the ingredients were heated through.

  • If seafood isn’t for you, you can substitute cubed chicken breast for the shrimp.
