To make the fried beef tacos, I started by dumping some lean ground beef into a large saute pan over medium-high heat.
I added some diced onions to the pan with the ground beef.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked, I drained the grease from the pan.
Then I added a packet of taco seasoning and a can of Rotel diced tomatoes and green chilies to the pan.
I stirred until all of the meat was coated in the seasoning.
I continued cooking the meat mixture until no liquid remained in the bottom of the pan.
Then I removed the pan from the heat.
I placed some 6 inch flour tortillas on the counter.
I sprinkled some shredded Mexican cheese blend on half of each of the tortillas.
Then I spooned some of the taco meat on top of the cheese.
I sprinkled some more shredded cheese on top of the meat.
Then I folded the tortillas in half and used two toothpicks per taco to hold the tortillas closed.
I heated one inch of canola oil over medium-high heat in a large saute pan until it reached 370F.
Then I used tongs to drop the tacos into the oil.
I was able to fit six tacos at a time in my saute pan.
I let the tacos cook until the bottoms were golden brown.
Then I flipped them to brown the other side.
It took two to three minutes per side for the tacos to brown nicely.
Once the tacos were cooked I used tongs to transfer them to a paper towel lined dish to soak up the oil.
I allowed the tacos to cool slightly before serving.
I served my tacos with salsa and sour cream for dipping.
These crispy fried tacos are sure to please the whole family.
