To make these birthday cake pancakes, I started by dumping some flour, granulated white sugar, baking powder and baking soda into a large mixing bowl.

I added some vegetable oil, an egg, milk, vinegar and vanilla extract to the bowl.

I mixed well until no lumps remained.

I folded the sprinkles into the pancake batter.

I left the batter to sit for a few minutes.

I used a 1/3 cup measuring cup to scoop the batter into a hot pan.

I cooked the pancake until the batter was bubbling on top.

Then I flipped the pancake to cook the other side.

Once the pancake was cooked on both sides I transferred it to a plate.

I repeated the process to cook ten pancakes.

I whisked together some powdered sugar, milk and vanilla extract to make some icing.

Once the pancakes had cooled slightly they were ready to serve.

Ingredients You’ll Need to Make These Funfetti Pancakes:

  • 2 ¼ cups all purpose flour
  • ¼ cup white granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup vegetable oil (+ more to cook with is optional)
  • 1 egg
  • 1 ¾ cup milk
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla
  • ½ cup sprinkles

Icing

  • 1 ½ cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla

Toppings

  • whipped cream
  • additional sprinkles

How to Make Funfetti Pancakes:

  1. Turn stove on medium heat and heat a non stick saute pan.
  2. Add all dry ingredients, except sprinkles, to the bowl and stir well.
  3. Add all wet ingredients and mix well, using a whisk if need be to remove any clumps.
  4. Fold in the sprinkles.
  5. Let batter sit for a few minutes before using a ⅓ cup measuring cup to pour onto already hot pan (with or without oil on pan to help prevent sticking).
  6. Cook pancake until batter is bubbling on top and then flip to cook the other side.
  7. Repeat to cook remaining pancakes.
  8. Whisk together the powdered sugar, milk and vanilla to make the icing.
  9. Allow the pancakes to cool slightly, add icing (or syrup), whipped cream, and more sprinkles and enjoy!

How thick should these pancakes get?

  • These pancakes won’t get super thick, it’s a medium thickness, so don’t worry if they aren’t super thick when you make them. You can compare yours to the ones in the photos to see the thickness they should get to.

How do I get these pancakes thicker?

  • To increase the thickness of pancakes you can let the batter sit for an extra 5 to 10 minutes to allow the flour to absorb more of the liquid in the batter. Or add more flour to the batter 1-2 tablespoons at a time.


When exactly do I flip these pancakes?

  • Flip the pancakes when the top is bubbling; if you want very light pancakes, flip when they start bubbling, for darker golden pancakes flip when they have bubbles spread over the entire pancake. You may also see the batter start to firm on the edges, this is another way to tell that it’s ready to flip.

I forgot to add the sprinkles to the batter, can I add it to the top of my pancakes while baking?

  • No! If you add the sprinkles while on the pan, the sprinkles will melt on the top of the pancake when you flip it over and you’ll have a layer of melted sprinkles on the top of your pancake. This does not look pretty and does not taste good. Instead, add the sprinkles of the rest of the batter and stir in before making more pancakes.


How do I make all of the pancakes the same size so I can stack them?

  • The best way to make sure all of the pancakes are just about the same size is by using a measuring cup to pour the batter onto the pan.

Notes

  • Do not add sprinkles to the top of the pancake while cooking, it will only end in a melted mess of blurred colors on the pancakes.
  • These will last in an airtight container in the fridge for 3-4 days.
  • You can freeze these and reheat in the microwave in 15-30 second increments until all the way warm.
