To make these cookies, I started by dumping some smooth peanut butter, softened butter and eggs into a large mixing bowl.

I used an electric mixer to cream the ingredients together until smooth.

I added some granulated white sugar and light brown sugar to the bowl.

I also added some vanilla extract to the bowl.

I used the electric mixer to combine all of the ingredients until smooth again.

Then I added some quick oats, baking powder and salt to the bowl.

I continued mixing with the electric mixer until a sticky dough formed.

I rolled the dough into one and a half inch balls and placed them on a parchment lined baking sheet.

I placed the baking sheet in the oven and baked the cookies until they were golden brown around the edges.

I removed the baking sheet from the oven and left the cookies to cool on the pan for five minutes.

After five minutes I transferred the cookies to a wire rack to finish cooling.

Ingredients You’ll Need to Make These Peanut Butter Oatmeal Cookies:

  • 3/4 cup smooth peanut butter
  • 3/4 cup butter, softened
  • 2 eggs, large
  • 1/4 cup white granulated sugar
  • 3/4 cup light brown sugar
  • 2 tsp vanilla extract
  • 3 cups quick oats
  • 1 tsp baking powder
  • 1 tsp salt

How to Make Peanut Butter Oatmeal Cookies:

  1. Preheat oven to 325F.
  2. Dump the peanut butter, softened butter and eggs into a large mixing bowl.
  3. Use an electric mixer to cream the ingredients together until smooth.
  4. Add the granulated sugar, brown sugar and vanilla extract to the bowl.
  5. Continue mixing with the electric mixer until all of the ingredients are fully combined.
  6. Add the quick oats, baking powder and salt to the bowl.
  7. Mix with the electric mixer until a sticky dough forms.
  8. Roll the dough into one and a half inch balls and place them on a parchment lined baking sheet leaving two inches between each dough ball.
  9. Place the baking sheet on the center rack in the oven.
  10. Bake the cookies until they are golden brown around the edges. 10-12 minutes.
  11. Remove the baking sheet from the oven and leave the cookies to cool on the pan for 5 minutes.
  12. After 5 minutes transfer the cookies to a wire rack to finish cooling.
  13. Serve and enjoy!
