To make this pasta Pomodoro, I started by cooking some penne noodles according to the directions on the package.
While the penne was cooking, I chopped some fresh cherry tomatoes in half.
Then I poured some olive oil and garlic puree into a large saute pan over medium heat.
I stirred the olive oil and garlic together well.
Then I added the halved cherry tomatoes to the pan.
I stirred until the tomatoes were coated in the olive oil and garlic.
Then I added some sugar, salt and pepper to the pan.
I stirred well again.
Then I placed a lid on the pan and left the tomatoes to cook over medium heat for ten minutes.
Once the penne pasta was cooked, I reserved 1/2 cup of the pasta water and drained the rest.
When the tomatoes had cooked for ten minutes, I removed the lid from the pan and stirred well.
Then I added some crushed tomatoes and basil pesto to the pan.
I stirred well.
Then I added the reserved pasta water and the cooked penne noodles to the pan.
I stirred well and let the pasta simmer for a few minutes.
Then the penne was ready to serve.
I scooped the pasta onto plates and garnished it with shredded parmesan cheese and basil leaves.

How to Make Penne Pomodoro:
- Cook penne pasta according to the directions on the package.
- When the pasta is done cooking reserve 1/2 cup of the pasta water and drain the rest.
- While the pasta is cooking start preparing the sauce by pouring the olive oil and garlic puree into a large saute pan over medium heat.
- Stir the olive oil and garlic puree together and leave them to cook for a couple minutes.
- Add the halved cherry tomatoes to the pan and stir until they are all coated in the garlic and olive oil.
- Add the sugar, salt and pepper to the pan and stir well again.
- Place a lid on the pan and leave the tomatoes to cook over medium heat for 10 minutes.
- After 10 minutes, remove the lid and stir the tomatoes well.
- Add the crushed tomatoes and basil pesto to the pan and stir well.
- Add the 1/2 cup of pasta water and cooked penne to the pan.
- Stir until all of the penne is coated in the sauce and then leave the pasta to simmer for a couple minutes.
