To make this pasta Pomodoro, I started by cooking some penne noodles according to the directions on the package.

While the penne was cooking, I chopped some fresh cherry tomatoes in half.

Then I poured some olive oil and garlic puree into a large saute pan over medium heat.

I stirred the olive oil and garlic together well.

Then I added the halved cherry tomatoes to the pan.

I stirred until the tomatoes were coated in the olive oil and garlic.

Then I added some sugar, salt and pepper to the pan.

I stirred well again.

Then I placed a lid on the pan and left the tomatoes to cook over medium heat for ten minutes.

Once the penne pasta was cooked, I reserved 1/2 cup of the pasta water and drained the rest.

When the tomatoes had cooked for ten minutes, I removed the lid from the pan and stirred well.

Then I added some crushed tomatoes and basil pesto to the pan.

I stirred well.

Then I added the reserved pasta water and the cooked penne noodles to the pan.

I stirred well and let the pasta simmer for a few minutes.

Ingredients You’ll Need To Make This Penne Pomodoro:

  • 12 oz penne noodles
  • 2 tbsp olive oil
  • 2 tbsp garlic puree
  • 1.5 lbs cherry tomatoes, cut in half
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup crushed tomatoes
  • 2 tbsp basil pesto

Optional Garnish

  • shredded parmesan cheese
  • chopped basil leaves

How to Make Penne Pomodoro:

  1. Cook penne pasta according to the directions on the package.
  2. When the pasta is done cooking reserve 1/2 cup of the pasta water and drain the rest.
  3. While the pasta is cooking start preparing the sauce by pouring the olive oil and garlic puree into a large saute pan over medium heat.
  4. Stir the olive oil and garlic puree together and leave them to cook for a couple minutes.
  5. Add the halved cherry tomatoes to the pan and stir until they are all coated in the garlic and olive oil.
  6. Add the sugar, salt and pepper to the pan and stir well again.
  7. Place a lid on the pan and leave the tomatoes to cook over medium heat for 10 minutes.
  8. After 10 minutes, remove the lid and stir the tomatoes well.
  9. Add the crushed tomatoes and basil pesto to the pan and stir well.
  10. Add the 1/2 cup of pasta water and cooked penne to the pan.
  11. Stir until all of the penne is coated in the sauce and then leave the pasta to simmer for a couple minutes.
  12. Garnish with shredded parmesan cheese and chopped basil leaves if desired.
  13. Serve and enjoy!
