- In a large cast iron or heavy bottomed skillet, turn the heat up to medium. Melt the butter and place the chicken breasts into the hot pan. Cook for about 5 minutes each side or until a meat thermometer reads 165 degrees F. Slice into 1 inch strips and set side.
- Returning to the skillet on medium heat, pour in the chicken broth and scrape up any bits left in the bottom of the pan.
- Add in the onion and cook until translucent, about 3 minutes.
