To make these twice baked potatoes, I started by brushing four large baking potatoes with vegetable oil and placing them on a parchment lined baking sheet.
Then I baked the potatoes for an hour.
After an hour, I removed the potatoes from the oven.
I sliced the potatoes in half lengthwise.
Then I scooped most of the potato flesh out of the skin, leaving just a thin layer of potato to help the skin keep it’s shape.
I placed all of the cooked potato into a large mixing bowl.
I added some softened butter and sour cream to the bowl.
I also added some milk, salt, pepper, onion powder and garlic powder to the bowl.
I used a potato masher to mash the potatoes and incorporate all of the ingredients into the potatoes.
I added some crumbled bacon and shredded mozzarella and cheddar cheese to the bowl.
I stirred the crumbled bacon and shredded cheese into the potato mixture.
I placed all of the potato skins on the parchment lined baking sheet.
I scooped the mashed potato mixture into the potato skins.
Then I sprinkled some shredded mozzarella and cheddar cheese on top of the potatoes.
I sprinkled some crumbled bacon and chopped green onions on top of the cheese.
Then I placed the baking sheet in the oven and baked the potatoes until the cheese on top was completely melted and just starting to brown around the edges.
I removed the potatoes from the oven.
I served the potatoes immediately.
You can serve them with some extra sour cream on the side if desired.

- After an hour remove the potatoes from the oven.
- Reduce the oven temperature to 350F.
- Slice the potatoes in half length wise.
- Scoop the flesh from the potatoes leaving a thin layer to help the potato skins hold their shape.
- Dump the cooked potato flesh into a large mixing bowl and place the potato skins on the parchment lined baking sheet.
- Add the softened butter, sour cream and milk to the bowl with the potato flesh.
- Add the salt, pepper, onion powder and garlic powder to the bowl.
- Use a potato masher to mash the potatoes and combine all of the ingredients.
- Add the crumbled bacon and shredded cheese to the bowl.
- Stir the bacon and cheese into the mashed potato mixture.
- Scoop the mashed potato mixture into the potato skins.
- Sprinkle the shredded cheese on top of the mashed potato.
