To make these banana blueberry muffins, I started by dumping some ripe bananas and eggs into a large mixing bowl.

I added some milk, vegetable oil and vanilla extract to the bowl.

I used an electric mixer to combine all of the ingredients until no large lumps remained.

Then I added some light brown sugar and salt to the bowl.

I used a rubber spatula to stir the brown sugar into the banana mixture.

Then I added some all purpose flour, baking powder and baking soda to the bowl.

I stirred until all of the ingredients were fully combined.

I added some fresh blueberries to the bowl.

I stirred the blueberries into the muffin batter.

Then I scooped the batter into a greased muffin tin, filling the cups to the top.

I placed the pan in the oven and baked the muffins until they were nicely browned on top and a toothpick inserted in the center came up clean.

I removed the pan from the oven and left the muffins to cool in the pan for five minutes.

After five minutes I flipped all the muffins onto their sides in the tin to allow the bottoms to cool.

Ingredients You’ll Need to Make These Banana Blueberry Muffins:

  • 3 very ripe bananas
  • 2 eggs, large
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
