To make this banana oatmeal muffins, I started by dumping three very ripe bananas and an egg into a large mixing bowl.
Then I added some milk, vegetable oil and vanilla extract to the bowl.
I used an electric mixer to combine the ingredients until no large chunks remained.
Then I added some light brown sugar, granulated sugar and salt to the bowl.
I stirred all of the ingredients together well with a rubber spatula.
Then I added some flour, quick oats, baking powder and baking soda to the bowl.
I stirred until a smooth batter formed.
Then I scooped the batter into greased muffin tins, filling the cups almost to the top.
I placed the muffin pan in the oven and baked the muffins until they were golden brown on top and a toothpick inserted in the center came up almost clean.
I allowed the muffins to cool for about five minutes in the pan.
After five minutes I transferred the muffins to wire racks to finish cooling.

- Remove the pan from the oven and allow the muffins to cool in the pan for 5 minutes.
- After 5 minutes transfer the muffins to a wire rack to finish cooling.
