To make this banana oatmeal muffins, I started by dumping three very ripe bananas and an egg into a large mixing bowl.

Then I added some milk, vegetable oil and vanilla extract to the bowl.

I used an electric mixer to combine the ingredients until no large chunks remained.

Then I added some light brown sugar, granulated sugar and salt to the bowl.

I stirred all of the ingredients together well with a rubber spatula.

Then I added some flour, quick oats, baking powder and baking soda to the bowl.

I stirred until a smooth batter formed.

Then I scooped the batter into greased muffin tins, filling the cups almost to the top.

I placed the muffin pan in the oven and baked the muffins until they were golden brown on top and a toothpick inserted in the center came up almost clean.

I allowed the muffins to cool for about five minutes in the pan.

After five minutes I transferred the muffins to wire racks to finish cooling.

  5. Stir well.

  8. Spray a 12 cup muffin tin with cooking spray or line with paper liners if you prefer.
  9. Scoop the batter into the cups filling them almost to the top.
  10. Place the muffin pan in the oven and bake until the tops are golden brown and a toothpick inserted in the center comes up almost clean. 16-18 minutes.
  11. Remove the pan from the oven and allow the muffins to cool in the pan for 5 minutes.
  12. After 5 minutes transfer the muffins to a wire rack to finish cooling.
