To make this potato salad, I started by dicing up some Yukon gold potatoes into approximately 1/4 inch pieces.
I left the skin on the potatoes, but you could peel them if you prefer.
Then I dumped the potato pieces into the bottom of a large pot.
I poured cold water over the potatoes in the pot until the water was about an inch higher than the top of the potatoes.
Then I added some salt to the water.
I placed the pot on the stove and brought the water and potatoes to a boil.
I boiled the potatoes until they were tender.
Then I poured the potato pieces into a colander to drain them.
I set the potatoes aside to cool while I prepared the dressing.
I dumped some mayo and ranch dressing into a large mixing bowl.
Then I added some salt, pepper, garlic powder and onion powder to the bowl.
I stirred until all of the ingredients were fully combined.
Once the potatoes were just slightly warm, but not hot, I added them to the bowl with the dressing.
Then I stirred until all of the potato pieces were coated in dressing.
I added some chopped green onions, crumbled bacon and shredded cheddar cheese to the bowl.
I stirred until all of the ingredients were fully combined.
Then I placed the bowl in the refrigerator and left the salad to chill for two hours before serving so that the potatoes could absorb all the flavours.
Then the loaded potato salad was ready to scoop and serve.

Looks awesome. My old favorite potato salad uses frozen shredded potatoes so am anxious to try them with this recipe. We can't often get Yukon golds here in our small store and my Idaho russets do break down fast so prefer to not use them----and I'm from Idaho! Really am excited to put this salad on some chopped Romaine lettuce and serve with a couple Roma tomatoes on the side. THANKS for the idea.
