To make these cherry cookies, I started by dumping some softened butter into a large mixing bowl.
I added some brown sugar and granulated sugar to the bowl.
I also added an egg and vanilla extract to the bowl.
Then I took some juice from the maraschino cherry jar and added it to the bowl.
I used an electric mixer to cream all of the ingredients together until smooth.
I added some all purpose flour to the bowl.
I also added some cornstarch, salt and baking soda to the bowl.
I continued mixing with the electric mixer until a sticky dough formed.
Then I added some semi sweet chocolate chips and chopped maraschino cherries to the bowl.
I stirred the chocolate chips and cherries into the dough.
I lined a baking sheet with parchment paper.
I used a 2 tablespoon cookie scoop to scoop the cookie dough onto the parchment lined baking sheet, leaving about 2 inches between the cookie dough balls.
I placed the baking sheet in the oven and baked the cookies until they were golden brown around the edges.
Then I removed the baking sheet from the oven.
I allowed the cookies to cool on the pan for 5 minutes.
Then I transferred them to some parchment paper on the counter to finish cooling.
Once the cookies were only slightly warm, they were ready to serve.
