To make this casserole, I started by dumping some condensed cream of chicken soup into a large mixing bowl.

I added some sour cream to the bowl.

I also added some ranch dressing mix, salt and pepper to the bowl.

Then I added some chopped green onions, crumbled bacon and roasted red peppers to the bowl.

I stirred all of the ingredients together well.

Then I added some shredded rotisserie chicken to the bowl.

I also added some shredded hashbrown potatoes to the bowl.

Then I added some shredded cheddar cheese.

I stirred all of the ingredients together well.

I sprayed a 9 x 13 inch baking dish well with cooking spray.

I dumped the mixture into the baking dish and spread it out evenly.

Then I placed the dish in the oven and baked the casserole for fifty minutes.

After fifty minutes I removed the dish from the oven.

 

I sprinkled some shredded cheddar cheese, roasted red pepper, crumbled bacon and chopped green onions on top.

Then I returned the casserole to the oven.

I continued baking just until the cheese was completely melted.

Then I removed the dish from the oven and allowed the casserole to rest for a few minutes.

  • 1 cup sour cream
  • 1 oz ranch dressing mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup chopped green onions
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup diced roasted red peppers
  • 3 cups shredded rotisserie chicken
  • 20 oz bag frozen shredded hashbrown potatoes, thawed
  • 1 cup shredded cheddar cheese

Topping

  • 1 cup shredded cheddar cheese
  • 2 tablespoons diced roasted red peppers
  • 2 slices bacon, cooked and crumbled
  • 2 tablespoons chopped green onions

How to Make Chicken Hashbrown Casserole:

  1. Preheat oven to 375F.
  2. Dump the cream of chicken soup, sour cream, ranch dressing mix, salt and pepper into a large mixing bowl.
  3. Add the chopped green onions, crumbled bacon and roasted red peppers to the bowl.
  4. Stir all of the ingredients together well.
  5. Add the shredded chicken, hashbrown potatoes and shredded cheddar cheese to the bowl.
  6. Stir until all of the ingredients are well combined.
  7. Spray a 9 x 13 inch baking dish well with cooking spray.

  10. After 50 minutes remove the dish from the oven.
