To make these funfetti cookies, I started by dumping some softened butter, granulated sugar and icing sugar into a large mixing bowl.

I used an electric mixer to cream the ingredients together until smooth.

Then I added an egg and some vanilla extract to the bowl.

I continued mixing with the electric mixer until the egg and vanilla were incorporated into the creamy mixture.

Then I added some all purpose flour, salt and baking soda to the bowl.

I mixed with the electric mixer until a sticky dough formed.

Then I added some white chocolate chips to the bowl.

I used a rubber spatula to stir the chocolate chips into the cookie dough.

Then I used a cookie scoop to scoop the dough into balls approximately 1.5 inches in diameter.

I dropped each cookie dough ball into a bowl of sprinkles and rolled them around until they were nicely coated in the sprinkles.

Then I placed the sprinkle coated dough balls onto a parchment lined baking sheet.

I left 2 inches between each cookie dough ball.

I placed the baking sheet in the oven and baked the cookies until they were starting to brown very slightly around the edges.

Then I removed the baking sheet from the oven.

I allowed the cookies to cool on the pan for 5 minutes.

After 5 minutes I transferred the cookies to wire racks to finish to cooling.

Ingredients You’ll Need to Make These Funfetti Cookies:

  • 1 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup icing sugar (powdered sugar)
  • 1 egg, large
  • 2 tsp vanilla extract
  • 2 cups all purpose flour

How to Make Funfetti Cookies:

  1. Preheat oven to 350F.

  9. Use a rubber spatula to stir the chocolate chips into the cookie dough.
  10. Pour the rainbow sprinkles into a small bowl.
  11. Use a cookie scoop to scoop the cookie dough into balls of 1.5 inches in diameter, or use your hands if you don’t have a scoop.
  12. Drop each cookie dough ball into the bowl of sprinkles and roll them around until they are well coated in sprinkles.
  13. Place the sprinkle covered cookie dough balls onto a parchment lined baking sheet.
  14. Leave at least 2 inches between each cookie dough ball.
  15. Place the baking sheet in the oven and bake the cookies until they are just starting to brown very slightly around the bottom edges.
  16. Remove the pan from the oven and allow the cookies to cool on the baking sheet for 5 minutes.
  17. After 5 minutes transfer the cookies to wire racks to finish cooling.
