This is the perfect treat for when you don’t feel like turning on the oven.
This no bake cookie recipe takes about 15 minutes of prep time and produces around 36 cookies.
To make these haystack cookies, I started by dumping some quick oats into a large mixing bowl.

I added some sweetened shredded coconut, salt and granulated sugar to the bowl.
I stirred all of the ingredients together well.
Then I dumped some semi sweet chocolate chips into a microwave safe bowl.
I added some smooth peanut butter to the bowl with the chocolate chips.
Then I placed the bowl in the microwave and heated the peanut butter and chocolate chips on high for 30 seconds.
I removed the bowl from the microwave and stirred the chocolate chips and peanut butter together well.
I continued microwaving and stirring the peanut butter and chocolate chips for 30 second intervals until the chocolate chips were completely melted.
Then I poured the chocolate and peanut butter mixture into the bowl with the oat mixture.
I stirred until all of the oats were coated in the chocolate.
Then I lined a baking sheet with parchment paper.
I scooped the mixture by the tablespoon and dropped them onto the parchment lined baking sheet.
I placed the baking sheet in the refrigerator for 20 minutes to allow the cookies to harden.
Then the tasty no bake cookies were ready to serve.
