To make these cream cheese enchiladas, I started by dumping some softened cream cheese and sour cream into a large mixing bowl.

I added some salt, pepper, garlic powder and onion powder to the bowl.

I used an electric mixer to combine all of the ingredients until no large chunks remained.

Then I added some shredded rotisserie chicken to the bowl.

I stirred until all of the chicken was coated in the cream cheese mixture.

Then I added a can of Rotel diced tomatoes and green chilies to the bowl.

I stirred well again.

I also added some shredded Mexican cheese blend and chopped green onions to the bowl.

I stirred until the shredded cheese and green onions were fully combined with the chicken mixture.

Then I laid some large flour tortillas on the counter.

I scooped the cream cheese chicken mixture onto the tortillas.

Then I rolled the tortillas up and placed them seam side down in a greased 9 x 13 inch baking dish.

I poured some green enchilada sauce over the rolled tortillas.

Then I sprinkled some more shredded cheese on top.

I placed the dish in the oven and baked the enchiladas until the tortillas were starting to brown around the edges.

Then I removed the dish from the oven.

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder

  • 3 cups precooked, shredded chicken
  • 10 oz Rotel diced tomatoes and green chilies, drained
  • 1/2 cup chopped green onions
  • 2 1/2 cups shredded Mexican cheese blend
  • 8 large flour tortillas
  • 10 oz green enchilada sauce

How to Make Cream Cheese Chicken Enchiladas:

  1. Preheat oven to 350F.
  2. Dump the cream cheese, sour cream, salt, pepper, garlic powder and onion powder into a large mixing bowl.
  3. Use an electric mixer to combine the ingredients together until no large chunks remain.
  4. Add the shredded chicken to the bowl and stir until all of the chicken is coated in the cream cheese mixture.
  5. Add the Rotel to the bowl and stir well again.
  6. Add the chopped green onions and 2 cups of the shredded cheese to the bowl and stir well again.
  7. Lay the tortillas on the counter and scoop the chicken mixture onto the tortillas.
  8. Roll up the tortillas and place them seam side down in a greased 9 x 13 inch baking dish.
  9. Pour the enchilada sauce over the tortillas.
  10. Sprinkle the remaining 1/2 cup of shredded cheese on top of the enchilada sauce.
  11. Place the dish in oven and bake until the tortillas are browning around the edges. 34-38 minutes.
  12. Remove the dish from the oven and serve.
