To make these chicken gumbo sloppy joes, I started by dumping a pound of lean ground beef into a large saute pan over medium-high heat.

I also added some yellow mustard, ketchup, salt, pepper and onion powder to the pan.

I stirred all of the ingredients together well.

I left the mixture to simmer until the liquid in the pan thickened.

I placed four brioche buns in single layer on a baking sheet.

I toasted the buns for 5 minutes in a 400F oven.

Then I spooned the sloppy joe mixture onto the buns.

  2. Dump the ground beef into a large saute pan over medium-high heat.
  3. Add the diced onions to the pan with the ground beef.
  4. Crumble the ground beef well as it cooks.
  5. Once the ground beef is fully cooked, drain the grease from the pan and reduce the heat to medium.
  6. Add the chicken gumbo soup, yellow mustard, ketchup, salt, pepper and onion powder to the pan.
  7. Stir all of the ingredients together well.
  8. Leave the mixture to simmer until the liquid in the pan thickens. About 4 minutes.
  9. Reduce the heat to low.
  10. Place the buns in a single layer on a baking sheet.
  11. Place the baking sheet in the oven and toast the buns until they are lightly browned. 4-6 minutes.
