To make these sloppy joes, I started by dumping some lean ground beef into a large non stick skillet over medium-high heat.

I added some diced onions to the skillet with the ground beef.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I drained the grease from the pan.

Then I added some frozen corn kernels to the pan.

I stirred well.

I added some water, brown gravy mix, salt and pepper to the pan.

I stirred well again.

I brought the liquid to a boil and then reduced the heat to low.

I left the ground beef mixture to simmer and thicken while I prepared some instant mashed potatoes.

Once the ground beef and gravy mixture had thickened to the point where there was almost no liquid in the pan, I removed the skillet from the heat.

I added some shredded cheddar and mozzarella cheese to the skillet.

I stirred just until the cheese was melted.

I placed some brioche buns on a baking sheet.

I toasted the buns in a preheated oven for four minutes.

Then I scooped some of the prepared mashed potatoes on to the bottom buns.

I spooned the ground beef mixture on top of the potatoes.

  5. Once the ground beef is fully cooked, drain the grease from the pan.
  6. Add the corn to the skillet and stir well.
  7. Add the water, brown gravy mix, salt and pepper and stir well again.
  8. Bring the liquid to a boil and then reduce the heat to low.
  9. Leave the ground beef and gravy mixture to simmer and thicken while you prepare the instant mashed potatoes.
  10. Once the ground beef mixture has thickened to the point that there is almost no liquid in the pan, remove the skillet from the heat.
  11. Add the shredded cheese to the skillet.
  12. Stir until the cheese is melted.
  13. Place the buns on a baking sheet and toast in the oven for about 4 minutes.
  14. Scoop mashed potatoes onto the bottom buns.
  15. Spoon the ground beef mixture on top of the mashed potatoes.
  16. Place the top buns on the sandwiches.
