Step by Step Instructions for Making Cheesy Tater Tot Meatloaf Casserole

STEP 1:

To make this ground beef and tater tot casserole, I started by dumping some ketchup and Sweet Baby Ray’s Hickory & Brown Sugar BBQ sauce into a small mixing bowl.

I stirred until the sauces were well combined and then set the bowl aside.

STEP 2:

I dumped two pounds of lean ground beef into a large mixing bowl.

Then I placed some Ritz crackers in a large Ziploc bag.

I used a rolling pin to crush the Ritz crackers.

Then I added the Ritz cracker crumbs to the bowl with the ground beef.

STEP 3:

I also added some Lipton onion soup mix and eggs to the bowl.

Then I took 1/2 cup of the ketchup and BBQ sauce mixture and added it to the bowl.

I used my hands to combine all of the ingredients well.

STEP 4:

Then I pressed the meatloaf mixture into a greased 9 x 13 inch baking dish.

I spread the remaining ketchup and BBQ sauce mixture over the meat.

STEP 5:

Then I placed some frozen tater tots in a single layer on top of the sauce.

I sprinkled some shredded mozzarella and cheddar blend and some crumbled bacon on top of the tater tots.

STEP 6:

I covered the baking dish with aluminum foil and placed it in the oven to bake for 35 minutes.

After 35 minutes, I removed the foil and left the casserole to continue baking, uncovered for another 40 minutes.

I removed the casserole from the oven and left it to sit for a few minutes before slicing and serving.

This juicy meatloaf casserole is packed with flavour.

Preheat oven to 350F.
