To make this casserole, I started by dumping a pound of lean ground beef into a large saute pan over medium-high heat.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I drained the grease from the pan.

Then I added some water and taco seasoning to the pan with the ground beef.

I stirred well and left the ground beef and taco seasoning mixture to simmer over medium-high heat for four minutes.

After four minutes, I added some diced onions, two cans of Rotel diced tomatoes and green chilies and some canned corn to the pan with the ground beef.

I stirred well and reduced the heat to low.

Then I poured some Bisquick mix into a large mixing bowl.

I added water to the bowl.

Then I stirred until a sticky dough formed.

I dumped the dough into a greased 9 x 13 inch baking dish and spread it out evenly.

Then I scooped the ground beef mixture on top of the dough and spread it out evenly.

I dumped some whipped chive cream cheese and mayo into a medium mixing bowl.

Then I added some onion powder and salt to the bowl.

I used an electric mixer to cream together the mayo and cream cheese until smooth.

Then I spooned the cream cheese mixture over the ground beef layer in the baking dish and spread it out as evenly as possible.

I sprinkled some shredded mozzarella and cheddar cheese on top of the cream cheese mixture.

Then I placed the dish in the oven and baked it for 40 minutes.

After 40 minutes I removed the casserole from the oven and left it to sit for a few minutes before slicing and serving.

  16. Place the dish in the oven and bake for 40 minutes.
  17. After 40 minutes remove the casserole from the oven and allow it to sit for a few minutes before slicing and serving.

I really wanted to like this... truly. It seemed promising. But the bisquick to ground beef combo to cream cheese/cheese ratio was unfortunately just all wrong.. it turned off so soft and mushy and doughy (and yes, the dough was fully cooked). I'd actually consider this to be comparable to a dip. It just didn't feel right to be eating as a portion of casserole. The flavor profile was decent, although it was giving me very prominent 7 layer "onion dip" vibes in taste- the only change I made was I utilized sloppy Joe seasoning instead of taco seasoning. But like I said, this was a big texture issue. (The taco seasoning probably would eliminate that heavy onion taste) If the bisquick was swapped out for perhaps diced potatoes and twice the thickness that the bisquick provided, then maybe we'd be talking... or, I'd even argue a double batch of cornbread batter instead. And ease up on the cream cheese and cheese. this recipe has potential with tweaks. Now.. what to do so as not to waste three quarters of this "casserole..."
