To make this mint fudge, I started by lining an 8-inch square baking dish with parchment paper.

Then I dumped some milk chocolate chips into a medium microwave safe bowl.

I poured some sweetened condensed milk on top of the chocolate chips.

Then I placed the bowl in the microwave and heated the ingredients on High for one minute.

I removed the bowl from the microwave and stirred until all of the chocolate chips were melted.

Then I dumped the chocolate mixture into the parchment lined baking dish and spread it out evenly.

I placed the baking dish in the fridge and left it to sit for half an hour so that the first layer could set.

After half an hour I removed the dish from the fridge.

Then I dumped some white chocolate chips into a medium microwave safe bowl.

I poured some sweetened condensed milk on top of the white chocolate chips.

Then I placed the bowl in the microwave and heated the ingredients of High for one minute.

I removed the bowl from the microwave and poured in some green food colouring and mint extract.

I stirred until the chocolate chips were melted and the food colouring was evenly distributed.

Then I poured the mixture on top of the milk chocolate layer in the baking dish and spread it out evenly.

I returned the dish to the fridge and left the fudge to set for another hour and a half.

After the fudge had set, I removed the dish from the refrigerator.

Ingredients

First Layer

  • 1 1/2 cups milk chocolate chips
  • 1/2 cup sweetened condensed milk

Second Layer

  • 1 1/2 cups white chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1 tsp green food colouring
  • 1/2 tsp mint extract

Instructions

  1. Line an 8-inch square baking dish with parchment paper
  2. Dump the milk chocolate chips and condensed milk into a microwave safe bowl.
  3. Microwave on High for 1 minute.
  4. Stir until chocolate chips are melted.
  5. Dump the mixture into the parchment lined baking dish and spread it out evenly.
  6. Place the baking dish in the fridge and leave it there for 30 minutes to allow the first layer to set.
  7. After 30 minutes remove the dish from the fridge.
  8. Dump the white chocolate chips and condensed milk into a microwave safe bowl.
  9. Microwave on High for 1 minute.
  10. Add the food colouring and mint extract to the bowl.
  11. Stir until the chocolate chips are melted and the colour is evenly distributed.
  12. Dump the mixture on top of the milk chocolate layer in the baking dish and spread it out evenly.
  13. Return the dish to the fridge and leave it to set for an hour and a half.
  14. Once the fudge is set, use the parchment paper to lift it out of the dish.
  15. Slice and serve.
  16. Enjoy!
