To make these Nutter Butter bars, I started by lining a 9 x 9 inch baking pan with parchment paper and sprayed it well with cooking spray.

Then I dumped some light brown sugar into a large mixing bowl.

I added some melted butter and an egg to the bowl.

I stirred the ingredients together well.

Then I added some vanilla extract to the bowl.

I also added some salt and smooth peanut butter to the bowl.

I stirred all of the ingredients together until smooth.

Then I added some all purpose flour to the bowl.

I placed some Nutter Butter cookies in a ziploc bag.

I used a rolling pin to crush the cookies.

Then I added the crushed cookies to the mixing bowl.

I stirred all of the ingredients together well.

Then I poured the mixture into the parchment lined baking pan and spread it out evenly.

I placed the baking pan in the oven and baked the blondies until a toothpick inserted into the center came up with just a few crumbs.

I set the pan aside while I prepared the chocolate topping.

I dumped some butter into a saucepan over medium heat.

Once the butter was melted, I added some granulated sugar to the pan.

I stirred the butter and sugar together well.

I left the butter and sugar mixture to continue cooking, stirring occasionally for three minutes.

Then I added some heavy cream to the pot.

I stirred well and brought the mixture to a boil.

Then I removed the saucepan from the heat.

I added some semi sweet chocolate chips to the pan.

I stirred until all of the chocolate chips were completely melted.

Then I poured the mixture over the peanut butter blondies in the baking pan.

I spread the chocolate mixture out evenly.

Then I placed some Nutter Butter cookies on top and gently pressed them down into the chocolate.

I left the Nutter Butter bars to set at room temperature for two hours.

After two hours I used the parchment paper to lift the peanut butter bars out of the baking pan.

Then I sliced and served the bars.

Ingredients You'll Need to Make These Nutter Butter Bars:

  • 1 cup light brown sugar
  • ½ cup butter, melted
  • 1 egg, large
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sal
  • ⅓ cup peanut butter
  • 1 cup all purpose flour
  • 21 Nutter Butter cookies

Chocolate Topping

  • ¼ cup butter
  • ¼ cup granulated sugar
  • ⅓ cup heavy cream
  • 1 cup semi-sweet chocolate chips

How to Make Nutter Butter Bars:

  1. Preheat oven to 350F.
  2. Line a 9 x 9 inch baking pan with parchment paper and spray with cooking spray.
  3. Dump the brown sugar, melted butter and egg into a large mixing bowl.
  4. Stir the ingredients together well.
  5. Add the vanilla extract, salt and peanut butter to the bowl.
  6. Stir well again.
  7. Add the all purpose flour to the bowl.
  8. Place 12 of the Nutter Butter cookies into a large ziploc bag and crush them with a rolling pin.
  9. Add the crushed cookies to the mixing bowl.
  10. Stir until all of the ingredients are fully combined.
  11. Dump the mixture into the parchment lined baking pan and spread it out evenly.
  12. Place the pan in the oven and bake until a toothpick inserted near the center comes up with just a few crumbs. 12 - 15 minutes.
  13. Remove the pan from the oven and set it aside while you prepare the chocolate topping.
  14. Add the butter to a saucepan over medium heat.
  15. Once the butter is melted add the granulated sugar to the pan.
  16. Stir well and leave the butter and sugar to continue cooking, stirring occasionally, for 3 minutes.
  17. Then add the heavy cream to the pan and stir well.
  18. Bring the mixture to a boil, and then remove the pan from the heat.
  19. Add the chocolate chips to the pan.
  20. Stir until the chocolate chips are completely melted.
  21. Pour the chocolate over the peanut butter bars in the pan and spread it out evenly.
  22. Place the remaining 9 Nutter Butter cookies on top of the chocolate layer and gently press them down into the chocolate.
  23. Leave the bars to set at room temperature for at least 2 hours.
  24. Use the parchment paper to lift the bars from the pan.
  25. Slice, serve and enjoy!

  1. I can’t believe there aren’t more comments and reviews for this recipe! They are SO GOOD!!! I am a huge fan of biscoff cookies and cookie butter. I switched out the peanut butter with cookie butter and crunched Speculoos cookies for the Nutter Butters. Next time I won’t put the cookies on top. One thing I did change with the Nutter Butters on the second batch was I put crumbled cookies instead of whole cookies to make it easier to cut smaller pieces. These have been a huge hit at work and home!
