To make these banana blueberry muffins, I started by dumping some ripe bananas and eggs into a large mixing bowl.

I added some milk, vegetable oil and vanilla extract to the bowl.

I used an electric mixer to combine all of the ingredients until no large lumps remained.

Then I added some light brown sugar and salt to the bowl.

I used a rubber spatula to stir the brown sugar into the banana mixture.

Then I added some all purpose flour, baking powder and baking soda to the bowl.

I stirred until all of the ingredients were fully combined.

I added some fresh blueberries to the bowl.

I stirred the blueberries into the muffin batter.

Then I scooped the batter into a greased muffin tin, filling the cups to the top.

I placed the pan in the oven and baked the muffins until they were nicely browned on top and a toothpick inserted in the center came up clean.

I removed the pan from the oven and left the muffins to cool in the pan for five minutes.

After five minutes I flipped all the muffins onto their sides in the tin to allow the bottoms to cool.

  • 3 very ripe bananas
  • 2 eggs, large
  • 1/2 cup milk
  • 1/3 cup vegetable oil

  9. Scoop the batter into greased muffin cups, or use paper muffin liners if you prefer.

  11. Place the pan in the oven and bake the muffins until they are nicely browned on top and a toothpick inserted in the center comes up clean. 17 – 20 minutes.
  12. Remove the pan from the oven and leave the muffins to cool in the pan for five minutes.
  13. After five minutes turn the muffins over in the pan or transfer them to a wire rack to allow the bottoms to cool.
