To make this chicken casserole recipe, I started by spraying the inside of my Crock Pot well with cooking spray.
Then I dumped some diced onions into the pot.
I also dumped some diced celery into the pot.
I placed some boneless, skinless chicken thighs in a single layer on top of the onions and celery.
Then I dumped two cans of condensed cream of chicken soup into a mixing bowl.
I added some water to the bowl.
I also added some Italian seasoning, salt and pepper to the bowl.
I whisked the ingredients together well.
Then I poured the soup mixture over the chicken thighs in the Crock Pot.
I poured some Stove Top stuffing mix on top of the soup mixture.
Then I poured some melted butter over the stuffing mix.
I placed the lid on the Crock Pot and set it to cook on HIGH.
After 4 hours of cooking time, I turned off the Crock Pot and removed the lid.
I stirred the contents of the Crock Pot well and broke apart the chicken thighs.
Then the slow cooker chicken and stuffing casserole was ready to serve.
This dish is the perfect comfort food for cold weather.
This recipe could also be made with boneless, skinless chicken breasts if you prefer.

I would make this again but would omit the butter. If I did use it maybe 2 tbs.The butter made it too greasy.

I had a package of 5 large breasts, so I basically doubled the recipe but just used 2 cans of cream of chicken soup, replaced the other with 1 cup of sour cream, and replaced the water with chicken stock, more flavor, and 2 pkg of dressing turned out great was falling apart after 4 hours.
