To make this Italian sausage meatloaf, I started by dumping some diced green peppers, diced red peppers and diced onions into a large saute pan over medium-high heat along with a dab of margarine.

I cooked the peppers and onions until the onions were translucent and just starting to brown.

Then I added some Classico marinara sauce and some Thai sweet chili sauce to the pan.

I stirred well and reduced the heat to low.

I removed two pounds of mild Italian sausage meat from the sausage casings and dumped the meat into a large mixing bowl.

Then I placed some Ritz crackers into a large Ziploc bag and used a rolling pin to crush them.

I poured the Ritz cracker crumbs into the bowl with the sausage meat.

I also added three eggs to the bowl.

I used my hands to mix all of the ingredients together very well.

Then I measured out one cup of the prepared peppers and marinara sauce mixture and added it to the bowl.

I stirred the marinara sauce and peppers mixture into the meat mixture until they were fully combined.

Then I lined a loaf pan with aluminum foil and sprayed it with cooking spray.

I scooped the meat mixture into the loaf pan and pressed it in well.

Then I poured the remaining sauce and peppers mixture on top of the meat and spread it out evenly.

I placed the meatloaf in the oven and baked it until a meat thermometer inserted in the center read 160F.

Then I removed the meatloaf from the oven and allowed it to rest in the pan for about five minutes.

Cut the recipe in half and made this delicious meatloaf. Put slices on a hard roll with some mozzarella cheese, put under broiler to melt the cheese. Also chop up leftovers and add to potatoes and onions and wrap in flour tortillas. This is so much more than a meatloaf. Thank you

I am a huge fan of sausage sandwiches with sautéed peppers, onions, and tomatoes - the kind they served at the county fair when I was way younger! This brings back that flavor profile but in a meatloaf form. Amazingly good!! The use of marinara and sweet Thai chili sauce was a brilliant twist! I ended up somehow with more sauce than needed so I froze the excess and plan to use it for a topping on grilled hotdogs later. The leftovers taste even more amazing as the flavors have a chance to concentrate. I did not think I needed yet another meatloaf recipe but very happy I found this one. Thank you for sharing!

This is absolutely the best meatloaf I have ever eaten! Shared it with neighbors who agree. No need for catchup to dress it up.

I made it with one pound mild Italian sausage and one pound ground beef, because that is what was in my refrigerator. But it definitely needs the sausage which gives it extra flavors.

I also cooked it in the foil pan in my Instant Pot for 30 minutes with a 15 minute natural release. It was so moist all the way through!
