To make this casserole, I started by dumping 2 pounds of lean ground pork into a large saute pan over medium-high heat.
I added some diced yellow onions to the pan with the ground pork as it was cooking.
I crumbled the ground pork well.
Then I added some salt, pepper, onion powder and garlic powder to the pan.
I stirred well and continued cooking the pork until no pink remained.
I drained the excess grease from the pan.
Then I added some Dr Pepper and Sweet Baby Ray’s Barbecue sauce to the pan with the ground meat.
I stirred well and then brought the liquid to a boil.
I left the mixture to continue boiling for 20 minutes, stirring occasionally, to allow the liquid to reduce and thicken.
Then I removed the pan from the heat.
I added some French’s crispy fried onions to the pan with the meat mixture.
I stirred until the fried onions were completely coated in the sauce.
Then I dumped the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
I sprinkled some shredded mozzarella and cheddar cheese on top of the meat.
Then I placed some frozen tater tots, in a single layer, on top of the cheese.
I placed the dish in the oven and baked the casserole for 25 minutes.
Then I removed the casserole from the oven and sprinkled shredded mozzarella and cheddar cheese on top of the tater tots.
I returned the casserole to the oven and continued baking it until the cheese was completely melted and just starting to brown on top.
I removed the casserole from the oven and left it to sit for a few minutes before scooping and serving.
