To make this casserole, I started by dumping 2 pounds of lean ground pork into a large saute pan over medium-high heat.

I added some diced yellow onions to the pan with the ground pork as it was cooking.

I crumbled the ground pork well.

Then I added some salt, pepper, onion powder and garlic powder to the pan.

I stirred well and continued cooking the pork until no pink remained.

I drained the excess grease from the pan.

Then I added some Dr Pepper and Sweet Baby Ray’s Barbecue sauce to the pan with the ground meat.

I stirred well and then brought the liquid to a boil.

I left the mixture to continue boiling for 20 minutes, stirring occasionally, to allow the liquid to reduce and thicken.

Then I removed the pan from the heat.

I added some French’s crispy fried onions to the pan with the meat mixture.

I stirred until the fried onions were completely coated in the sauce.

Then I dumped the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

I sprinkled some shredded mozzarella and cheddar cheese on top of the meat.

Then I placed some frozen tater tots, in a single layer, on top of the cheese.

I placed the dish in the oven and baked the casserole for 25 minutes.

Then I removed the casserole from the oven and sprinkled shredded mozzarella and cheddar cheese on top of the tater tots.

I returned the casserole to the oven and continued baking it until the cheese was completely melted and just starting to brown on top.

  • 4 cups Dr Pepper

  • 3 cups shredded cheddar and mozzarella cheese blend

Instructions

  1. Preheat oven to 425F.
  2. Dump ground pork into a large saute pan over medium-high heat.

  4. Crumble the ground pork well.
  5. Add the salt, pepper, onion powder and garlic powder to the pan.
  6. Stir well and continue cooking the pork until no pink remains.
  7. Drain the excess grease from the pan.
  8. Add the Dr Pepper and barbecue sauce to the pan with the ground pork.
  9. Stir well and bring to a boil.
  10. Leave the mixture to continue boiling for 20 minutes, stirring occasionally, to reduce and thicken the sauce.
  11. After 20 minutes remove the pan from the heat and add in the French's fried onions.
  12. Stir until all of the crispy fried onions are coated in sauce.
  13. Dump the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  14. Sprinkle 2 cups of the shredded cheese on top of the meat.
  15. Place the frozen tater tots in a single layer on top of the cheese.
  16. Place the dish in the oven and bake the casserole for 25 minutes.
  17. After 25 minutes remove the dish from the oven and sprinkle the remaining cup of shredded cheese on top of the tater tots.
  18. Return the dish to the oven and continue baking until the cheese on top is completely melted and just starting to brown. 7-9 minutes.
  19. Remove the casserole from the oven and allow it to sit for a few minutes before scooping and serving.
  20. Enjoy!
