This pumpkin spice cheesecake serves eight people and takes only fifteen minutes of work to prepare.
I used a store bought graham pie crust for this recipe but you could make your own graham crust if you prefer.
To make this no bake dessert, I started by dumping some softened cream cheese, granulated sugar, vanilla extract and pumpkin pie spice into a large mixing bowl.
I used an electric mixer to combine the ingredients until smooth.
Then I poured some white chocolate baking chips into a microwave safe bowl.
I microwaved the baking chips on high for one minute and then stirred them until they were completely melted.
I poured the melted white chocolate into the mixing bowl with the cream cheese mixture.
Then I continued mixing with the electric mixer until the chocolate was fully combined with the cream cheese mixture.
I added some Cool Whip to the mixing bowl.
I used a rubber spatula to fold the Cool Whip into the cream cheese mixture.
Then I scooped the mixture into a store bought graham pie crust and spread it out evenly.
I poured some white chocolate baking chips into a Ziploc bag.
I used a small heavy bottomed pot to crush the white chocolate chips until they were well crumbled.
I sprinkled the crumbled white chocolate on top of the cheesecake.
Then I placed the cheesecake in the fridge and left it to chill for three hours to allow it to set.
Then I sliced and served the cheesecake.

Ingredients
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1 3/4 cup white chocolate baking chips
- 1 cup Cool Whip
- 1 graham pie crust
Instructions
- Dump softened cream cheese, granulated sugar, vanilla extract and pumpkin pie spice into a large mixing bowl.
- Use an electric mixer to cream together the ingredients until smooth.
- Pour 1 1/2 cups of the white chocolate chips into a microwave safe bowl.
- Microwave the baking chips on high for 1 minute.
- Then stir well until they are completely melted.
- Pour the melted white chocolate into the mixing bowl with the cream cheese mixture.
- Continue mixing with the electric mixer until the white chocolate is fully combined with the cream cheese mixture.
- Add the Cool Whip to the mixing bowl.
- Use a rubber spatula to fold the Cool Whip in to the cream cheese mixture.
- Scoop the mixture into the graham pie crust and spread it out evenly.
- Pour the remaining 1/4 cup of white chocolate chips into a Ziploc bag and use a heavy bottomed pot to crush them until well crumbled.
- Sprinkle the crumbled white chocolate on top of the cheesecake.
- Place the cheesecake in the refrigerator and leave it to chill for at least 3 hours before slicing.
- Serve and enjoy!
